DARK BALSAMICS CONDIMENTOS (Modena, Italy)
A-PREMIUM BALSAMIC – The grape used to make our Premium Dark Balsamic undergoes cooking and caramelizing in copper kettles over an open wood fire before being aged in the Solera System. Varietal wood barrels of the Solera System are charred on the interior to add character & complexity while deepening the colour during the aging process. The result is a complex, yet tart vinegar with a touch of sweetness, subtle dried fruit characteristics, and 6% acidity. Perfect for any vinaigrette or marinade. Extremely adaptable, it can be used to compliment any Extra Virgin Olive Oil or fused/Infused Olive Oils.
Black Cherry – Natural Black Cherry concentrate, other natural flavourings, and aged Balsamic Vinegar are combined to produce a sweet, fragrant and very rich tasting product that has garnered rave reviews from our gourmet customers. Enjoy on salads that feature cheeses like feta or blue, or over orange and onion Sicilian salad. Aged in the traditional Solera System, from Modena, Italy.
Blueberry – Made with all-natural ingredients, our luscious Wild Blueberry Balsamic Vinegar is just as tantalizing over garden salad as it is over fruit salad. When paired with delicate extra virgin oils including the Hojiblanca, Nocellara, and even the Arbequina, the intense blueberry flavor will shine. Makes a beautiful dressing or bread dipper by combining with our Blood Orange olive oil or Lemon-fused olive oil. Pairs well with Blue Cheese or Feta cheese, or with a simple fresh Ricotta cheese. Cinnamon-Pear – One of our personal favorites! This delightful balsamic is spicy and warm, perfect drizzled over fresh fruit or as a dessert topping. It has the unique taste of d’anjou pear, and matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing. We love it drizzled over delights such as poached pears, ice-cream, strawberries and
angel food cake, but it also works well over leafy green salads, fresh cheeses like brie or camembert.
Dark Chocolate – This Dark Chocolate Balsamic Vinegar is rich, thick and resounds with the complexity of three different chocolates responsible for the depth of its flavour. Drizzle over vanilla gelato, mix with fresh berries or add zing to your chicken mole sauce and other Mexican inspired dishes! Also works surprisingly well with roasted root vegetables and roasted potatoes.
Fig (Black mission) – All natural ingredients, our solera-aged Fig Balsamic Vinegar, from Modena, is thick and ripe, bursting with an unmistakable fig flavour. Beautiful over leafy green salads, such as spinach or arugula, and absolutely delightful when drizzled over a soft creamy goat cheese and various aged cheeses. Northern Maple – We have searched high and low, and it appears that we have created the first of its kin, an aged Pure Northern Maple Balsamic, using real 100% pure maple syrup produced at a small family farm bordering the Vermont/Quebec region. This balsamic is outrageously good, and works well with pancakes and waffles, as a BBQ sauce base, pork chops, salmon, glazed ham, maple-balsamic glazed bacon, ice cream, dressings, marinades, chocolate, cake, fruit… the possibilities are endless. Pairs well with a mild-buttery EVOO, and the Blood Orange Fused Oil, and the Garlic Infused Oil.
Neapolitan Herb Dark Balsamic – Zesty and versatile, our Neapolitan Herb Dark Balsamic has just the right amount of acidity to shine in a multitude of culinary applications, especially where a savory characteristic is desired. It will launch your next salad, marinade, or BBQ to the next culinary level. Try drizzled over roasted vegetables or fresh sliced summer heirloom tomatoes. Use to marinate poultry, spike a Bloody Mary, Portabella mushrooms, pork or a thick rib-eye steak before grilling. Fantastic in dressings, with pasta, rice, quinoa, drizzled over cucumbers and tomatoes, brushed on bruschetta or paired with creamy cheeses. Pairs well with Garlic, Blood Orange, Lemon, Lime, Tuscan Herb Olive Oil, any UP Certified Extra Virgin Olive Oil.
Pomegranate – The all natural flavour of ripe pomegranates is perfectly captured in this well-balanced solera-aged balsamic vinegar from Modena. With a touch of sweetness from the naturally present sugars in the grapes and the pomegranate itself, the distinct, yet subtle tartness of the pomegranate makes this an ideal balsamic for those moments where a "less sweet" condiment is desired! The intense sweet-tart flavour of the pomegranate is a perfect match for hearty meats such as lamb and duck. It makes an exciting dressing whisked with your favourite oil, pomegranate seeds, toasted nuts and feta cheese. It adds depth to pan sauces, braised meats or compotes. Denissimo Balsamic Vinegar - Limited Reserve
Our Denissimo is made from Trebbiano grape must, which is naturally caramelized & cooked down to an even greater extent than our traditional “Batteria” of Modena. Our exclusive “Denissimo” contains less than 1% barrel aged Italian wine vinegar for pro-biotic effect, and slowly ages in five different casks comprised of mulberry, ash, oak, juniper & cherry wood. This exquisite and exceedingly rate density & complex flavor notes of dried fruits, raisins, figs, and hints of dark chocolate and malt. Serve with your finest cheese plate, drizzle over melon or berries, use as a finishing glaze for roasted meats, adorn your grilled vegetables, or make your desserts swoon. There are so many culinary applications in which this balsamic shines! It is highly aromatic and intensely flavourful, a lower-fat alternative to many processed salad dressings, and is great for adding a splash of brightness when finishing sauces and soups. Pairs well with any of our EVOOs, infused/fused olive oils or gourmet oils.
