Ultra Premium (UP) is a new category of olive oil that distinguishes the highest quality olive oil in the world. In fact, Ultra Premium Olive Oil exceeds world standards for olive oil quality. It is the freshest and finest olive oil in the world today.

The UP standard is reserved for the finest extra virgin olive oils in the world, as such, the UP grade exceeds all existing European, Italian, Spanish, Greek, North American, Californian, or any other standard for the grade known as extra virgin olive oil.

Extra Virgin Olive Oils are categorized as such due to their flavour profile intensity ranging from Mild, Medium to Robust.

Mild Intensity EVOOs … Mild oils tend to be lighter in flavour, and sometimes sweeter. Mild EVOOs are better suited to delicate dishes that are lightly seasoned or simply prepared, or where an intense olive oil is not desired. These milder olive oils often work well in baking recipes as well.

Medium Intensity EVOOs … Unlike the more robust or intense flavour profile olive oils that have a strong peppery finish and very intense flavours on the front end, medium intensity oils tend to be mid-way between the very robust, and very mild oils. Medium Intensity olive oils are usually very versatile oils, and can be used comfortably with a variety of dishes without being overwhelming or too mild.

Robust Intensity EVOOs … Unlike the mild flavour profile olive oils that are very round, and sometimes referred to as “sweeter”, Robust olive oils tend to have a strong peppery finish, a distinct bitterness and very intense flavours on the front end of the palate. Robust olive oils are often better suited to full-flavoured dishes that are well seasoned so that they can hold up to the complexity of the olive oil.

 NORTHERN HEMISPHERE … Ultra Premium EVOO

Chetoui EVOO “Denocciolato” “organic”, Robust Intensity, Country of Origin: Tunisia.

Chetoui is an exceptional Early Harvest olive oil pressed from the Tunisian Chetoui varietal. This year’s harvest is certified “organic” and is also our highest phenol olive oil from the Northern Hemisphere at an impressive 667.4 Biophenols! Chetoui EVOO displays Tuscan style characteristics, notes of fresh cut grass and has a creamy artichoke heart center. It has a beautiful grassy aroma. It is low in bitterness with a ton of pungency and a pleasant peppery finish. An exceptional oil for those who are seeking to maximize on the health benefits of a fresh High Phenolic Olive Oil (HPOO)!

Nocellara EVOOMedium Intensity, Country of Origin: Italy.

A coveted variety native to Sicily! This year’s harvest of the Italian Nocellara presents the palate with prominent savoury creamy notes of artichoke and a hint of fresh grass. It is commonly prepared and cured for use as a table olive but is also prized for its great quality and fragrant oil. It is a versatile oil that is best suited to warm dishes, meats & vegetables. It is well balanced and has a delicate peppery finish. This Early Harvest olive oil from Sicily captures all the flavours of the Nocellara varietal and the essence of southern Italy.

Picual EVOO “Oro Bailen” Medium Intensity, Country of Origin: Spain.

This medium intensity, Early Harvest green Picual is a beautiful Spanish olive oil that is intensely aromatic and vibrant green! The Picual is the most commonly planted olive variety in both hemispheres, and is the most widely cultivated variety in Spain. The Picual EVOO is crafted by one of the world’s most decorated producers, Oro Bailen. On the palate is both savoury and grassy, displays stunning notes of tomato leaf, creamy artichoke and green apple. Contains pepper notes with slight bitterness. It is a truly superb and balanced oil, both in the nose and on the palate. Great over any fresh cheese variety, seafoods, and salads. A delightful condiment and finishing oil to use virtually anywhere!

Chiquitita EVOO – Mild Intensity, Country of Origin: Portugal.

The Chiquitita is slightly sweet with its low bitterness score, delicate on the palate, and displays pleasant notes of green almond. It is mild and creamy, has a delightful fruity finish. A very versatile olive oil that is sure to please the palate! A rare example of a Spanish varietal that has been around since 1991
This newly discovered cultivar is a natural cross between the iconic Spanish Picual and Arbequina varieties. Our first harvest and example of this rare varietal this year is produced in Portugal and impresses the palate with its delicate flavours.

SOUTHERN HEMISPHERE … Ultra Premium EVOO

Hojiblanca EVOO “Melgarejo” – Medium Intensity, Country of Origin: Chile.

This year’s Early Harvest of the fragrant Hojiblanca displays dominant notes of green apple, green avocado and has a lingering Szechuan peppercorn finish. It is a High Phenolic Olive Oil (HPOO) that is floral and incredibly well balanced. This popular Spanish varietal literally means “white leaf” and is prized for its signature smoothness and clean flavour profile. Freshly pressed and produced by one of the top olive oil producers in the world winning multiple prestigious awards year after year! It is a beautiful finishing oil for big dishes, pasta, meats, roasted vegetables, and full flavoured salads.

Arbequina EVOO – Mild Intensity, Country of Origin: Chile.

This year’s Early Harvest of the Chilean Arbequina is desired for its signature smooth fruitiness, and its fresh and mild profile. Made with Arbequina olive, it displays prominent notes of green apple, dried grass, and a pleasant lingering bitterness. This season’s Arbequina is very complex and is uncharacteristically bold for an Arbequina. A big olive oil with full flavour.

Picholine EVOO - Medium Intensity, Country of Origin: Australia.

The Picholine varietal is commonly found in the olive producing regions in the south of France but is now harvested in many producing regions around the globe. This year’s Australian harvest is highly approachable, displaying no bitterness. It is wonderfully creamy, presenting notes of dried grass and pine nuts. It is a pleasant, rich and versatile olive oil.
